Traditional Jamaican Toto (Coconut Cake) Recipe
Ingredients
- 2 cups shredded coconut fresh or dried
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- 1/2 cup unsalted butter softened
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup coconut milk
- pinch of salt
Instructions
Preheat and Prepare
- Preheat oven to 350°F (175°C).
- While it’s warming up, grease an 8×8 square or round baking pan with butter or parchment paper.
Mix the Dry Ingredients
- In a medium bowl, sift together the flour, baking powder, cinnamon, and salt.
- Set this bowl aside.
Cream the Butter & Sugar
