Freshly grated cheese from block is key to a smooth, creamy dip.
Take block of sharp cheddar and mild cheddar and grate to measure.
Set aside.
Combine:
In a large mixing bowl, add both freshly grated cheeses, cream cheese, mayonnaise, Dijon mustard, garlic powder, onion powder, and pimentos.
Stir everything together with a spoon or spatula until well combined.
Taste your dip and adjust the seasoning as desired.
Chill and Serve:
