Ingredients
2sweet potatoespeeled, cooked, and mashed
1cupgranulated sugar
1/2cupevaporated milk
2eggs
1teaspoonvanilla extract
1/2teaspoonground cinnamon
1/4teaspoonground nutmeg
1/4teaspoonsalt
1tablespoonunsalted buttermelted
1pie crust doughstore-bought or homemade
Instructions
Prepare the Sweet Potatoes:
Begin by peeling and chopping the sweet potatoes into chunks.
Boil the chunks in a large pot of water for about 15-20 minutes, or until they are fork-tender.
Drain the water and mash the sweet potatoes until smooth.
Make the Pie Filling:
In a large mixing bowl, combine the mashed sweet potatoes with sugar, evaporated milk, eggs, vanilla extract, cinnamon, nutmeg, and salt.
Add the melted butter and stir everything together until smooth and well combined.
Fill the Pie Crust:
Pour the sweet potato filling into the prepared pie crust, smoothing the top with a spatula. Make sure the filling is evenly distributed.
Bake the Pie:
Preheat your oven to 350°F (175°C).
Bake the pie for about 50-60 minutes, or until the filling is set and the top is lightly golden. Check the doneness by inserting a knife or toothpick into the center when it comes out clean, the pie is ready.
Cool and Serve:
Once the pie is done, remove it from the oven and let it cool completely on a wire rack before slicing.
Serve the pie as is, or top it with a dollop of whipped cream or a scoop of vanilla ice cream.
