  • Prepare. First and foremost, preheat the oven! Then, gather all ingredients to have them ready and prepare a baking dish.
  • Dry. In a mixing bowl, add all dry ingredients. I often sift them in.
  • Wet. In a separate bowl (I know, dishes… I’m sorry!), add and combine all wet ingredients.
  • Mix. Dig a little hole in the middle, Add wet ingredients to dry and stir until all combined.
  • Pour. To the prepared baking dish, gently spoon in the batter. Jiggle the baking dish a little to evenly spread.
  • Bake. Place cornbread into oven and bake for 30 minutes or until golden.
  • Serve! Cool slightly, cut into pieces and serve (with honey!).

  • Mixing Bowl to mix

Ingredients

  • 2 tbsp Butter unsalted; melted
  • 1 cup Cornmeal
  • 1 cup Flour
  • 2 tbsp Brown Sugar dark
  • 2 tbsp Cane Sugar or white sugar
  • 1 tbsp Baking Powder
  • 1 cup Milk dairy or non-dairy
  • 1 whole Egg room temperature
  • 1/3 cup Olive Oil
  • Salt generous pinch

Instructions

Preheat and Prepare

  • Preheat oven to 400F.
  • Prepare ingredients
  • Melt 2 tbsp of butter in a baking dish to cover the bottom and sides; do not use butter spray.

Wet Ingredients

  • In a small bowl, add egg, milk, and olive oil.
  • Beat until combined, set aside.

Dry Ingredients

  • In a separate mixing bowl, add cornmeal, flour, brown sugar, cane sugar, baking powder, and salt
  • Mix to combine.

Mix

  • Make a well in the middle of the dry ingredients and carefully pour wet ingredients into dry.
  • Mix well, scraping the bottom to incorporate dry into the wet.

Bake

  • Pour the mixed batter into a baking dish with melted butter. Do not mix.
  • Bake in preheated oven for 30 mins
  • Remove from oven when lightly browned on top and inserted toothpick comes out clean.

  • Saucepot with lid
  • Wooden Spoon

Ingredients

  • 4 cups Almond Milk
  • Salt a pinch or two
  • Cream of Wheat
  • 4 tbsp. Sugar
  • 2 tbsp. Vanilla Extract
  • Cinnamon as desired and extra for serving

Instructions

  • In a covered saucepot, bring (4) cups of almond milk to boil over medium heat.
  • While almond milk boils, prepare and measure the remaining ingredients.
  • Once the almond milk has started boiling, remove lid to add a pinch of salt, and slowly add (3/4) cup of Cream of Wheat. Carefully continue to stir.
  • Return pot to boil.
  • Reduce heat to low. Add (4) tablespoons of sugar, (2) tablespoons of vanilla extract, and a desired amount of cinnamon.
  • Simmer uncovered for (2-3) minutes, continue to stir.
  • Once Cream of Wheat has thickened, remove from heat. Give one last generous stir.
  • Allow to cool slightly, before serving.
